A cake consisting of a fresh quark mousse, on a light biscuit, finished with a raspberry compote and flamed Italian meringue and decorated with pieces of nougat on the edge.
A Dutch apple pie consisting of a layer of almond paste, almond batter, an apple filling with candied orange, apricot, walnut, raisins and cinnamon, on a rich dough base and decorated with a grid of macaroon paste.
Director and Pastry Chef Joost Rotteveel has taken over management at Huize van Wely in the Netherlands since 2016. He started working at Huize van Wely since he was 15 years old and he became pastry champion of the Netherlands, five times in a row. His best accomplishment is that he won the European champion award for pastry 1988, followed by finishing third at the world championships: quite a performance.
Frenchman Pascal Aprahamian is Pastry Chef as well as Chef of the Ice cream department. As he is a true professional, he set the ice cream department at Huize van Wely up himself. Pascal has been working at Huize van Wely since 1986 and still finds its job challenging: developing new products keeps him motivated.
Our Executive Chef Pastry, Robin Hoedjes started working at Huize van Wely in 2014 after his experience abroad as a Chef Pastry in Kuwait. Not much later he became the Chef Pastry at Huize van Wely. He won his first pastry competition in 2005. After that he won the Dutch Gouden Gard award 2009, The Culinair Wordcup 2010 with the Culinary Team The Netherlands and his greatest accomplishment is that he won the Dutch Pastry Award 2015 which resulted in a membership in the Dutch Pastry Team. Robin has a lot to offer and developing modern new products is one of his strengths.
